The Perfect Powerball Snack

A little bite size snack to have on hand that's not only easy to make but can be changed up to fit your preferences in a variety of ways - there really are no rules on this one.

Sparked from a moment of motherhood necessity these powerballs have evolved from a lactation cookie (recipe for that coming soon) into a treat that you, your partner or even your kids can eat depending on their age. Our favorite combination is almond butter, some maple syrup and adding in collagen too.
INGREDIENTS
3 cups old-fashion or quick oats (GF)
1..5 cups of protein powder (flavor your choice)*
1.5 cups of nut butter of your choice
1 cup + 2 tbsp of honey (or maple syrup or a combo)
3 teaspoons pure vanilla extract
A pinch of salt
Optional: dark chocolate chips, chopped nuts, or dried fruit for texture
*Split the protein powder amount with collagen powder if desired
DIRECTIONS
In a large mixing bowl, combine rolled oats and protein powder.
Options
Warm in a saucepan over low heat, almond butter and honey until well combined. Remove from heat and stir in vanilla extract and a pinch of salt.
OR you could mix all ingredients into one bowl and skip this step.
Pour the almond butter mixture over the oats and protein powder, stirring until thoroughly mixed.
If desired, fold in dark chocolate chips, chopped nuts, or dried fruit.
Option to allow the mixture to cool slightly, then refrigerate for about 15-30 minutes to make it easier to handle OR you could go straight into ball making.
Scoop out small portions of the mixture and roll them into bite-sized balls.
Place the protein-packed energy balls on a tray and refrigerate for at least an hour before serving. Depending on the size of ball you make and the type of protein powder you use, you're looking at around 130 calories per ball, 5 grams of protein and 1 gram of fiber you form around 40 balls. Enjoy.
